Once again, I can't go to a gathering with just a pan of brownies. I can't. I have to fancy them up in some way. Again, this may sound "snobby" and I promise I am not!
I took these to my husband's g-ma and g-pa's house for our yearly get-together. Usually I make some sort of cake or cupcakes, but this year brownies were on my mind.
I just baked a batch of box mix brownies.
In my opinion, the brand of brownie mix you buy really does make a difference.
I lined the pan with foil and sprayed it with non-stick cooking spray. When they were done and completely cooled, I lifted them out of the pan and used a glass to cut them into circles.
I took the circle brownies and put them in regular size cupcake liners.
Then I took a regular can of chocolate frosting and heated it in the microwave for like 30 seconds I think.
{You should probably make sure all the foil is off the rim first.}
I just spooned the frosting over the tops of the cupcakes and ta-da! When they were set I put them in cake box (cause yes, I have those on hand along with the cake boards).
I used mini cupcake liners and the leftover brownie parts to make the mini ones.
This was the best pic I had of the finished ones. My daughter came in with a funny look on her face, like "Why is mom taking pictures of brownies?"
I think they needed something else on top. Like chopped peanut butter cups or maybe if they weren't traveling 2 hours away some whipped topping, ooooo, or caramel. Wow, I think I better stop now.
